I first tried this quinoa stuffing right before Thanksgiving, when a couple friends and I were trying to come up with our Thanksgiving day meal plan. We were looking for an alternative to traditional bread stuffing and immediately fell in love with this recipe. So much so, I still make it quite often as an entire meal, not just a side. For those who don’t know what gnocchi is, it is simply a potato pasta. It is usually made with good old white potatoes. However, I have a thing for sweet potatoes; not only are they super healthy for you but they also taste pretty darn good! So when I saw a picture of sweet potato gnocchi, I knew I had to figure out how to make some. It turned out that it wasn’t any different to make than regular gnocchi. Happy National Peanut Butter Lover’s Day! So today I give you a combination of two of my great loves; peanut butter and smoothies. I can almost have a smoothie for every meal. Most days I have just one smoothie, but some days I will have two or 3. They are such a great way to get your fruits and veggies in for the day. This is one of my favorite smoothies that I make. I use PB2, which is a powdered peanut butter, I get mine on Amazon but I know you can get it in some stores. You can also use regular old peanut butter too.
